The tradition behind the olive
Olives are naturally bitter on the tree and must be cured — in brine, over weeks — to become the mellow, savoury fruit we eat. Green olives are picked before ripening for a firm bite; black olives are fully ripe, softer and milder.
Demand for olives has grown fast in Pakistan with the popularity of pizza, pasta, salads and Mediterranean-style cafés. FreshCo’s three formats cover home cooks and HORECA kitchens alike: whole green, whole black, and convenient pitted green.
